|Chateau Pavie – the largest and arguably most established of all Saint Emilion properties also boasts the status of Premier Grand Cru Classe (A) making it one of only four Chateau to hold this rank.
The Pavie vineyard dates back to Roman times. It takes its name from the orchards of peaches ("pavies") that used to stand there. The modern estate was assembled by Ferdinand Bouffard in the late 19th century by buying plots from several families.
The estate was sold to Gerard Perse in 1998 and as part of this he heavily invested in the winery putting in a new cellar and vineyard irrigation system and also bought in Michel Rolland as an external consultant. Cutting yields from 55 hl/ha to 30 hl/ha has seen a massive increase in quality and concentration of the wine.
Since his acquisition of the estate the wines have gone from strength to strength with the 2000 vintage being it’s inaugural perfect score only two years after his acquisition of the estate, with their 2020 offering being another strong vintage for the estate
